EASY PASTA Recipe Ingredients: 1 package of vegetable or spelt pasta 1 medium zucchini, cut into cubes 1 cup broccoli 5 garlic gloves, chopped or minced 2-3 medium tomatoes, cut into cubes 1/4 cup sun dried tomatoes 6-7 basil leaves, fresh, chopped 1/2 tsp. tahini powder 1 tbsp. olive oil chilies, crushed, to taste
Recipe Instructions: Cook paste according to directions, drain, and put aside. Heat oil in the skillet, add garlic, basil, chilies, sun dried tomatoes, and tahini powder for about 2 minutes. Add vegetables. Cook for about 4-5 minutes until vegetables are soft. Mix in pasta in the pan. Add a little olive oil. Stir constantly for about 2 minutes.
Preparation time: 10 minutes Cook time: 10 minutes Serving: 4
ORANGE ALMOND SALAD WITH ALMOND DRESSING Recipe Ingredients: One head green leaf lettuce 10 oz. can of mandarin orange segments 1-2 oz. almonds slivers, toasted
For Dressing: 1 cup creamy almond butter 1 can vegetable broth 1/4 cup fresh lime juice 2 tbsp. plus 1 tsp. Bragg Liquid Aminos (Available in any health food stores, like Whole Foods or WildOats) 2 tbsp. fresh ginger, grated 1/2 tsp. dried crushed red pepper 1 lime peel julienne
Dressing Preparation: Place almond butter in heavy medium saucepan. Gradually mix in vegetable broth. Add all ingredients except lime peel. Stir over medium heat until smooth and thick, for about 6 minutes. Cover and cool. Store the rest of the dressing in the refrigerator. I use this dressing as a dipping sauce with vegetables. It's delicious.
Recipes Instructions: Toast almonds in the oven for few minutes. Place lettuce, mandarin orange segments and almond in a large bowl. Mix in the dressing and toss.

RED-BEAN CHILI Recipe Ingredients: 1 1/3 tsp. olive oil 1/2 medium onion, chopped 1/2 medium green bell peppers, chopped 1 tsp. chili powder 1/2 tsp. ground cumin 1/4 tsp. sea salt 1/4/ tsp. garlic powder 2/3 cup Soy Burgers Crumbs (I cook Boca Burgers and crumble them) 1/2 cup water 1 1/4 cup canned crushed tomatoes 1/2 cup kidney beans, drained and rinsed 2 oz. soy cheddar cheese, grated
Recipe Instructions: In large sauté pan with cover, heat oil on medium heat. Sauté onions and green peppers in oil for 5 minutes or until onions turn translucent. Add chili powder, cumin, salt and garlic powder. Cook for another 2 minutes. Add soy burger crumbs and water. Stir in tomatoes and kidney beans. Cover and simmer for 30 minutes to blend in the flavor. Serve in a bowl. Sprinkle it with grated cheese.
* You could also use cut up spelt (no yeast) round soft tortilla. Cut the tortilla into four or more slices, you can use pizza cutter to make the slices come out nice and even). Toast the slices in the toaster or in the oven and place them in the bowl around the rim. It makes a nice presentation and makes chili taste much better. It's Russ's favorite dish.
